What Are Blinis?
Blinis are Russian pancakes that are traditionally made from wheat or buckwheat.
Traditionally blinis were made using yeasted batter which means that it needed to rise before being baked in an oven. These days it's common to cook blinis in stove top and the batter doesn't require yeast.
There are many varieties to blinis and today I would like to share mine.
Parmesan Blinis
Why make a plain blini batter when you can add some parmesan flare to it. Don't you agree?
These delicious blinis are so easy to make, just like any other pancakes.
I'm using self-rising flour for this recipe. If you don't have it, don't worry. You can make your own self-rising flour at home.
I'm also adding some grated parmesan cheese to give that extra flavour to these yummy little beauties.
I like to make my blinis small by spooning 1 tablespoon of batter on the pan. That way I have them all more or less the same size and they will be perfect to serve as appetizer.
How To Store Blinis
During the holidays I usually have to manage my time so that I don't go crazy with all the cookings that I have to do.
So the things that I can make in advance, I will. These blinis are one of them.
I usually make them as advance as 1 week earlier and freeze them individually in a zip lock bag.
The night before serving, I would defrost them in the fridge. Before platting, I would warm them up a bit in the microwave to bring them back to life.
They will taste as fresh and delicious as recently made.
Cream Cheese Topping
For this recipe I'm making 2 different cream cheese toppings.
Lemon chives cream cheese and honey mustard cream cheese.
They both are so easy to prepare and the flavours match perfectly with smoked salmon.
You can either prepare the cream cheese topping the night before or few hours before serving. Keep them in the fridge until you need them.
Having the blinis and cream cheese topping prepared in advanced will definitely make your job easier. When the time comes, simply assemble everything and then serve.
That way you will not be stuck in the kitchen the whole time. I hope you'll give these delicious smoked salmon blinis a try.

Smoked Salmon Blinis
Ingredients
Parmesan Blinis
- ½ cup self rising flour (75 gr)
- ⅛ teaspoon salt (1 gr)
- ⅛ teaspoon baking powder (1 gr)
- ½ cup milk (125 ml), room temperature
- 1 egg , room temperature
- 1 tablespoon unsalted butter (15 ml), melted
- ¼ cup grated parmesan (15 gr)
- some butter , for the pan
- slices of smoked salmon , as needed
- chives for decoration
Lemon Chives Cream Cheese
- ½ cup cream cheese (125 gr), room temperature
- ½ tablespoon lemon zest
- ½ tablespoon chopped chives
- 2 tablespoon lemon juice (30 ml)
Honey Mustard Cream Cheese
- ½ cup cream cheese (125 gr), room temperature
- 1 tablespoon mustard (15 ml)
- 1 tablespoon honey (15 ml)
- ½ teaspoon dried dill
Instructions
Parmesan Blinis
- In a bowl, add in self rising flour, salt and baking powder. Whisk to combine and set aside.
- In another bowl, add in milk and egg. Whisk to combine and then add in melted butter. Give it a few more whisk to combine everything.
- Pour into previously prepared flour mixture. Mix everything just until well combined. Add parmesan and give it a last mix to combine everything.
- Heat a pan with some butter on medium heat. Put 1 tablespoon of blinis batter onto the pan, giving some space in between them. Cook until you can see bubbles around the edges. Then flip and continue cooking for another minute until the blinis are fully cooked. Transfer to a plate and set aside.
Lemon Chives Cream Cheese
- In a bowl, add in cream cheese, lemon zest, chives and lemon juice. Mix until well combined.
- ASSEMBLING: Place 1 blini on a plate. Pipe some lemon chives cream cheese on top. Place a piece of smoked salmon on top of the cream cheese and finish it off with some sprinkle of chives. Do the same to the other 7 blinis.
Honey Mustard Cream Cheese
- In a bowl, add in cream cheese, mustard, honey and dried dill. Mix until well combined.
- ASSEMBLING: Place 1 blini on a plate. Put a piece of smoked salmon on top and then pipe some honey mustard cream cheese on top of the salmon. Finish it off by placing 2 crossed chives on top. Dp the same to the rest of the blinis.
