Preheat the oven to 375ºF (190ºC). Line a baking tray with parchment paper.
Assemble
In a bowl, mix mustard, honey, and dill.
Lay out the cold puff pastry and spread the honey mustard on top, leaving 1 inch at one edge. Place turkey hams, followed by Harvati and parmesan cheese, and finally, sprinkle of chives.
Roll the puff pastry into a log and cut into 1-inch slices. Place on a tray lined with parchment paper.
Bake
Bake on the middle rack for 13 minutes or until golden brown. Enjoy!
Notes
Handling the puff pastry. Puff pastry is easiest to work with when it is very cold. If you use frozen puff pastry, let it semi-defrost so it remains pliable without becoming too soft to handle. For fresh puff pastry, you can semi-freeze it to make it firmer and easier to work with, as it tends to soften quickly at room temperature. Thirty minutes should be sufficient for both methods.
Don't fill up until the edges. This will prevent the filling from oozing out when you roll the puff pastry. Leave around 1 inch on the edge.
Chill before baking. If the assembled log feels soft to cut, chill it in the fridge for 30 minutes. It'll be firmer and make cutting it easier. It also will make the puff pastry puff up more beautifully!
