Preheat the oven to 375ºF (190ºC). Line a tray with parchment paper.
We recommend freezing it for 30 minutes to make cutting it easier. Cut it into 1-inch pieces and place on a parchment paper to avoid them from sticking.
Cut the puff pastry into 3-inch squares and line them on a tray lined with parchment paper. Make slits around the edges and prick the center with a fork.
Brush the edges with egg wash. Place around 1-2 tablespoons of caramelized onion in the center, followed by 1-2 pieces of camembert cheese.
Bake them on the middle rack for 13 minutes or until golden brown. Place some rosemary on top. Enjoy!
Notes
Semi-defrost the puff pastry if using a frozen one. This will give you time and make it easier to handle as it tends to get soft quickly.
Freeze the fresh puff pastry for 30 minutes before using. Same reasoning as above; semi-frozen puff pastry is easier to work with.
Make the slits on the squares. This will make the edges rise beautifully!
Freeze the camembert before slicing. Trust us; this will make it way easier to cut without your knife and fingers getting sticky.
Chill the assembled squares. If the puff pastry squares feel soft after assembling, place the tray in the fridge for 15-30 minutes to firm them up. This will ensure they bake beautifully later!
